Our Hyogo oysters mature in just 12 months, growing remarkably large and creamy thanks to abundant phytoplankton and meticulous sea floor cleaning. These ideal conditions allow our oysters to reach the perfect size for harvest within a year, setting them apart from the typical 2-3 year growth period. These efforts by our producers are what make 1-year oysters possible.
One thing distinctive about our oysters compared to other production areas is the major difference in yield of edible parts. For oysters from other areas, generally 20-25% of the total weight is edible, but this ratio is 30-35% for OosterBay’s oysters, showing how tightly-packed each shell is.
Frozen Oysters in the Shell (Sashimi Grade), is processed with cutting-edge proton freezer technology. Selected at peak flavor (January to May), these high-quality oysters are frozen using advanced equipment to amplify their sweetness.
