Karasumi Dried Mullet Roe

Karasumi or Dried Mullet Roe is known by many names – Bottarga by the Italians, Botargue by the French, myeongran in Korean, and more. Highly prized (and priced), prices are higher on a per gram basis when the size of the Karasumi pieces are bigger. The bigger pieces are better quality and command high pricing. When sliced, squeeze from lime on it and use it as a snack for pairing with drinks. Most Italians would grate it into powder and put generous shavings of it over pasta – which is delicious too! The shavings can be used to grace many other dishes with its unique, rich flavours.
