Amaebi, or spot prawns, are cold water shrimp known for their sweet taste. They are the only species of shrimp that are best enjoyed raw, as cooking them will rob them of their sweet taste and creamy texture. OosterBay’s Amaebi are wild-caught in the cold waters between Russia and Northern Japan.
Thawing Instructions
Remove the required portion from the freezer.
Place the prawns in a sealed bag or container to prevent water exposure.
Thaw slowly in the refrigerator for 6–8 hours or overnight. For a quicker option, immerse the sealed bag in cold water and allow them to thaw for 30–60 minutes.
Preparing Amaebi for Sashimi
Gently rinse the thawed prawns under cold running water.
Peel the shell carefully, leaving the tail intact for a traditional presentation.
Arrange the prawns on a chilled plate, garnish as desired, and serve immediately.
