The Black Winter Truffle (Tuber Melanosporum), also known as the Perigord truffle, is finest black truffle available. It is in season from December to April, and can be distinguished from other black truffle varieties by its interior appearance – white veins running through black flesh. They are intensely aromatic with superb depth of flavor.
