Made fresh from a whole 70kg bluefin tuna, our chefs prepare the most prized cut — silky minced tuna belly (Negi-Toro). It’s then mixed with fresh spring onion for a light, refreshing bite, and topped with a rich quail egg that adds extra creaminess when stirred in.
