Isaki (Chicken Grunt) 伊佐木/いさき


Isaki is another nice summertime shiromi. It starts appearing at Toyosu in early spring but doesn’t reach its full flavor potential until June. It is a gorgeous looking tane with a red band directly under the skin and translucent white lower layers. The flavor is typical of shiromi: delicate, lean and sweet. Aging the fish for a day or two before serving further improves these attributes.
