Shima Aji also known as Striped Horsemackerel, is a warm water fish that can be found in the Pacific Ocean and around Southern Hokkaido. The flesh is rich and smooth in flavor due to the cutting technique that delicately pulls the skin off from the fish to maintain the surface of the meat. Shima Aji has a great balance between high quality fat and flavor of the meat. Prepared daily by our skilled chefs at Uni Gallery, where every piece of sashimi is prepared in-house.
